Preliminary evaluation of commercial enzymes and reaction time based on free fatty acid content and glyceride class distribution

Preliminary tests were conducted to observe the behavior and select one of three commercial enzymes, as well as, after selection, to determine the reaction duration for optimization tests. The reactions were monitored by measuring the content of free fatty acids and the content and classes of glyceride compounds (HPSEC).
