Metagenome-assembled genomes (MAGs) from spontaneously fermented Mexican and international beverages (pozol, pulque, kombucha, and kefir)

This dataset contains metagenome-assembled genomes (MAGs) reconstructed from shotgun metagenomic sequencing of four spontaneously fermented beverages: pozol and pulque (Mexican ancestral beverages) and kombucha and kefir (internationally commercialized beverages). MAGs were recovered and quality-assessed to characterize the taxonomic and functional diversity of these fermented microbial communities, including candidates of interest for synthetic probiotic community design (e.g., Priestia flexa, Hafnia alvei, Brettanomyces bruxellensis, Komagataeibacter rhaeticus, Lentilactobacillus kefiri). These data support the manuscript "Genome-resolved functional mining of fermented beverage microbiomes enables rational design of a synthetic probiotic community"
