Good and bad classification of Water Chestnut (Trapa natans )

Water chestnuts ( _Trapa_ _natans_ ), also known as "singhara" or "paniphal," are aquatic root vegetables valued for their crisp texture and nutritional profile.
Nutritional and Health Benefits:
Good water chestnuts are low in calories and fat while being rich in fiber, potassium, manganese, and antioxidants like ferulic acid. They are traditionally used to manage blood pressure, support digestion, and serve as a gluten-free energy source during fasting.
Shelf life:
The standard shelf life of Water chestnut (Trapa natans) Lies in between 2- 3 days at room temperature (25°C).
After 2-3 days, it starts changing color, producing foul odor, due to its high moisture content.
Appearance :
Water chestnuts appearing dark purple to slight black in colors are considered as good one whereas fruits with cracks, shriveled skin, or tiny holes on outer surface are considered as damaged or avoidable fruits.
Sample collection :
High quality water chestnuts with rock-hard, firm texture, smooth skinned, having a pleasant odor, are bought from the local market ( 25.028°N, 88.143°E) of Malda Town, West Bengal, India and the location of market is mapped using GPS coordinates.
After collecting the fruits, they are sorted to remove the poor ones based on their appearance. They are rinsed to remove any kind of impurities or hazards.
The selected fruits are placed in a water bowl to ensure their freshness and quality. Samples which floated to the top, are discarded, while samples sinked in water are chosen.
Image capturing :
Digital images of the samples are captured using a Smart phone ( SAMSUNG galaxy, M01S) Operating on Android 9.0 (Pie) with One UI core (upgradable to Android 11),Octa-core Media Tek Hello P22(MT6762) 6.2-inch HD+ PLS TFT LCD Infinity-V display with 720into 1520 pixels resolution ( ~ 270 ppi density), 3 GB RAM, 32GB internal storage, Front Camera 8MP(f/2.0), Rear Camera - Dual: 13 MP primary sensor(f/1.8) + 2MP depth sensor(f/2.4). Dimensions - 156.9* 75.8* 7.8mm;168 g weight.
Image acquisition was carried out daily for 7 consecutive days, after collecting the sample to monitor the visual quality change and shelf life determination.
Images were captured for 2 kinds of samples,- first samples were water chestnuts with peels and second were water chestnuts without peels as shown in the uploaded files. 40- 50 images were captured per day .The image dataset was used to study and analysis of progressive changes in color, texture, surface integrity and microbial spoilage during the period of analysis. This systematic image acquisition protocol enabled continuous non-destructive monitoring of Singhara quality through out the acquisition period
The Data set :
In this data set the Good folder contains 500 images and Bad folder contains 500 bad images of Traps natans(water chestnut). Therefore the total number of images in this data set is 1000.
These 1000 images describes how the visual quality of Singhara changes during its storage.
