The sake yeast S. cerevisiae strain K1401 was used in this study. The strain was pre-cultivated in TGY medium (5 g/L tryptone, 1 g/L glucose, and 3 g/L yeast extract) at 25 °C for 12 h. One mL of pre-cultivated cell suspensions of K1401 (2.25 × 106 cells/mL) was added in 200 mL of modified TGY medium (20 g/L tryptone, 150 g/L glucose, and 10 g/L yeast extract). This solution was incubated at 14 °C for 7 days.culture. The reads with high quality were mapped on the Saccharomyces cerevisiae S288C genome GCF_000146045.2.
