The comparison of non-aeration and aeration during steeping and germination of rice malt was examined in this research. The weight gain, alpha-amylase, beta-amylase activities and the total reducing sugar in rice malt was determined and the scanning electron microscope of starchy endosperm presented a modification of malted grain. The alpha-amylase activity in rice malt from aeration process was higher than that found in non-aeration processes significantly (p<0.05) at the first 5 days
