Gluconacetobacter xylinus , formerly named as Acetobacter xylinus or Acetobacter xylinum, are often found and involved in vinegar production, and are thought to cause acetic acid degradation and determine the tastes of vinegars. Some of G. xylinus strains are famous for the high quantity of cellulose production, which is highly regarded as diet foods, called Nata de coco. G. xylinus NBRC13693 is one of the strains which efficiently produces cellulose. Comprehension from the genome analysis of G. xylinus strains may be useful for the cellulose production, and for biorefineries because of cellulase genes in its genome.
