古语有云:民以食为天。中餐是中国文化的重要组成部分,又称中华食文化,被誉为世界三大菜系(中国菜、法国菜、土耳其菜)之一,深远影响了东亚地区。中餐讲究餐饮礼仪、四季有别,不仅强调色、香、味的搭配,还注重食医结合的中和之美。现今中餐主要分为“八大菜系”,不同地域的饮食文化各不相同。目前的烹饪方式更是包含了“烹、炒、煎、炸、炝、煮、焖、烘”等一百多种技法。  习近平总书记在党的十九大报告中指出,“没有高度的文化自信,没有文化的繁荣兴盛,就没有中华民族的伟大复兴。”饮食文化是强化民族认同感的重要手段,也是传播国家形象、寻求文化认同的有效抓手。中华饮食文化在历史长河中经历了朝代更迭的洗礼和淬炼,逐渐形成了根植于中华大地具有强大影响力和渗透力的饮食特点,由此产生的强烈的民族自豪感和认同感,使传统饮食文化成为中华儿女文化自信的关键元素。

As an ancient Chinese saying goes, "Food is the paramount necessity of the people." Chinese cuisine, an important part of Chinese culture and also known as Chinese food culture, is recognized as one of the world's three major culinary traditions (Chinese, French and Turkish cuisines), exerting profound influence on East Asia. Chinese cuisine emphasizes dining etiquette and adapting to the four seasons, not only focusing on the coordination of color, aroma and taste, but also valuing the harmonious beauty of integrating diet with traditional Chinese medicine. Nowadays, Chinese cuisine is mainly divided into the "Eight Major Regional Cuisines", with distinct dietary cultures across different regions. Currently, there are more than a hundred cooking techniques including stewing, stir-frying, pan-frying, deep-frying, quick-boiling with seasoning, boiling, braising and baking. General Secretary Xi Jinping pointed out in the report to the 19th National Congress of the Communist Party of China: "Without a strong sense of cultural confidence and the flourishing of culture, there can be no great rejuvenation of the Chinese nation." Dietary culture is an important means to strengthen national identity, as well as an effective approach to disseminating national image and seeking cultural recognition. Through the trials and tempering of dynastic changes over the long course of history, Chinese dietary culture has gradually formed distinctive dietary features with strong influence and penetration rooted in China. The strong national pride and identity thus generated have turned traditional dietary culture into a key element of cultural confidence for the Chinese people.
