Preservatives are often added to aquatic products during processing to improve their freshness. The feed fed to aquatic organisms during the breeding process and the water environment for aquaculture carry certain quality and food safety risks and hidden hazards. This dataset can be used to conduct safety evaluations on the levels of carcinogenic substances in aquatic products, providing reference and technical support for government supervision and consumer purchasing decisions. The problem detection rate of sulfur dioxide (calculated as sulfur dioxide residue) in aquatic products = (number of detected problematic items related to sulfur dioxide (calculated as sulfur dioxide residue) in aquatic products) / total number of aquatic products monitored for sulfur dioxide (calculated as sulfur dioxide residue)
