黄曲霉素是强烈的致癌物。其中，黄曲霉素B1的毒性为砒霜的68倍、等量氰化钾的10倍。它会对人体器官、组织，尤其是肝脏组织带来极大的损害。坚果中就很容易滋生黄曲霉素。本数据可以对坚果炒货中的黄曲霉毒素的含量情况进行安全性评价，为政府部门监管提供依据，避免因食用含有黄曲霉毒素而产生食品安全问题，进一步保障消费者的食品安全。1.数据采集：采集样品编号、检验数量、样品名称、项目、方法、最大限定值、报告值、单位等信息；2.数据处理：(1)是否超出标准值，报告值为未检出、报告值小于等于最大限定值的为未超出，反之为超出，具体使用IF、OR的函数；(2)坚果炒货中的黄曲霉毒素的含量监测总数：为数据统计范围内总检验数量；(3)坚果炒货中的黄曲霉毒素的含量检出问题项次数：通过SUMIF函数将超出标准值的检验数量求和；(4)坚果炒货中的黄曲霉毒素的含量问题发现率=坚果炒货中的黄曲霉毒素的含量检出问题项次数/坚果炒货中的黄曲霉毒素的含量监测总数。

Aflatoxins are potent carcinogens. Among them, aflatoxin B1 is 68 times as toxic as arsenic trioxide and 10 times as toxic as an equivalent amount of potassium cyanide. It inflicts severe damage on human organs and tissues, particularly liver tissue. Aflatoxins readily contaminate nuts and roasted nut snacks. This dataset enables safety assessment of aflatoxin content in roasted nut snacks, providing a scientific basis for government regulatory agencies, preventing food safety incidents caused by consumption of aflatoxin-contaminated foods, and further protecting consumer food safety.
1. Data Collection: Collect information including sample ID, number of tests, sample name, test item, detection method, maximum allowable limit, reported value, and unit.
2. Data Processing:
(1) Standard Limit Exceedance Judgment: Samples with a reported value of "not detected" or a reported value less than or equal to the maximum allowable limit are classified as non-exceeding, while all others are classified as exceeding. The IF and OR functions are employed for this classification.
(2) Total Number of Aflatoxin Content Tests for Roasted Nut Snacks: Refers to the total number of tests conducted within the data statistics scope.
(3) Number of Non-Compliant Test Results for Aflatoxin Content in Roasted Nut Snacks: Sum the number of tests that exceed the standard limit using the SUMIF function.
(4) Problem Detection Rate of Aflatoxin Content in Roasted Nut Snacks = Number of Non-Compliant Test Results / Total Number of Aflatoxin Content Tests for Roasted Nut Snacks.
