Raw analytical dataset for a grain amaranth-based extruded instant porridge (ENDIP) for the management of moderate acute malnutrition

Replicate-level raw laboratory and sensory data underlying the development and evaluation of ENDIP, a grain amaranth-based extruded instant porridge for the dietary management of moderate acute malnutrition in children under five. The dataset covers proximate composition of raw materials and of formulations F1 and F5; mineral composition (AAS); anti-nutrient content (tannin, oxalate, phytate) for raw ingredients, raw blends and extruded blends; water absorption capacity; bulk density with derived flow indices; and panelist-level 9-point hedonic sensory scores for six coded samples (n = 30). All analyses were conducted in triplicate. Analyses were performed at the Tanzania Food and Nutrition Centre (TFNC) Food Laboratory, Dar es Salaam, December 2025.
