The meat microbiota of white-tailed deer meat was assessed by measuring the (1) mesophilic aerobic bacteria (MAB), (2) lactic acid bacteria (LAB), (3) enterobacteria (EB) and (4) Escherichia coli (EC) counts with culturing. The presence of food borne pathogens (Campylobacter, Salmonella, STEC, Yersinia and Listeria), was studied by PCR. Additionally, the microbiota was investigated by 16S rRNA -based metagenomics.
