The fermentability benefits of Palmaria palmata xylo-oligosaccharides against obesity

In this dataset, we collected results relating to the fermentability of the xylo-oligosaccharide-rich extract of Palmaria palmata previously digested (INFOGEST 2.0) using a static human faecal fermentation model that allows us to obtain results on pH changes, short-chain fatty acid production and lactic acid production. These data were collected from the faecal fermentation of two different groups obtained from healthy volunteers or obese volunteers. Data on changes in xylo-oligosaccharide consumption and changes in the microbiota are still being collected. The extract and two different positive controls (fructo-oligosaccharides and xylo-oligosaccharides from corn) were subjected to the INFOGEST 2.0 digestion model before being used in fermentation. A negative control of INFOGEST 2.0 (made with distilled water) was used, as well as a normal negative control for the fermentations. Different aliquots were taken at four different times (0 h, 12 h, 24 h and 48 h). In addition to the effects of fermentability, the antioxidant effects of the crude extract and the digest were also analysed using ABTS and ORAC assays. The spreadsheets are organised by experiment (pH measurement, lactic acid measurement, etc.) per sheet.
