This project investigates the microbial diversity and succession during the traditional Vietnamese rice fermentation process known as Com ruou. Shotgun metagenomic sequencing was used to characterize bacterial and fungal communities in the starter culture and at key fermentation stages. The study aims to identify dominant taxa, and their contributions to fermentation-related biochemical transformations. The results provide insights into microbial ecology in traditional fermented foods, support improvements in food safety, and contribute to the scientific understanding of fermentation processes in Southeast Asian food systems.
