GC–MS Volatile Dataset of Natural and Artificially Ripened Banginapalli Mangoes

This dataset contains HS-SPME-GC–MS-derived volatile organic compound (VOC) data for Banginapalli mango (Mangifera indica L.) subjected to natural ripening, calcium carbide-induced ripening, and ethylene-induced ripening. It includes the complete set of 36 reported VOCs, the 31-VOC dataset used for PCA and HCA, and numerical data used to evaluate the effects of calcium carbide concentration and exposure duration on VOC composition.
