Mezcal fermentation in the Guerrero state is mainly artisanal and have unique characteristics in each fermented batch. Main aim of this study is to explore the microbial composition in musts from uncharacterized Guerrero Mezcal by using a more detailed non-cultivable analysis, specifically the high-throughput sequencing platform (Ion-Torrent PGM).
