This file contains the raw data generated for the growth dynamics of 15 Torulaspora delbrueckii strains and one Saccharomyces cerevisiae strain, both grown under different single nitrogen sources. Each yeast strain was inoculated at an initial optical density (OD600 nm) of approximately 0.1 into 150 μL of Synthetic Must (SM) medium. The SM medium included 25 g/L of sugar (50% fructose / 50% glucose) along with a single nitrogen source, as detailed in Table 1. The medium was adapted from the work of Rollero et al. (2015) by adjusting the final sugar concentration and incorporating only one of the single assimilable nitrogen sources listed in Table 1. For the positive control, a mixed nitrogen source containing various amino acids and ammonium chloride was used, while a nitrogen-free SM medium served as the negative control. The yeast cells were incubated at 21 °C with shaking in the 96-well microplates. Growth was monitored by measuring absorbance at 600 nm every hour for 48 hours for the T. delbrueckii strains and 72 hours for the S. cerevisiae strain, using a CLARIOstar® Plus microplate reader. The data presented here was analyzed and discussed in the research article titled “Nitrogen Utilization Diversity in Torulaspora delbrueckii Isolates Relevant to Food and Beverage Fermentations.”
