The dynamics of microbiota during the whole solid state fermentation of Chinese cereal vinegar were determined and analyzed by principal component analysis . Our study provides detailed information for the fermentation mechanism of traditional Chinese cereal vinegar. Increased scientific knowledge are very necessary to improved vinegar manufacture technology and ensure higher standards of quality and safety in expanding and diverse worldwide market.
