This data set contains the data on fatty acid composition and FTIR absorption of different lipid matrices, including virgin olive oil and sunflower oil. The data correspond to the following publication: N. Tena, R. Aparicio, D.L. In this work, a new strategy based on ‘mesh cell’-FTIR was developed and optimized to monitor chemical changes in different lipid matrices using a combination of light and mild heating was applied. Thus, the objective was to check the effect of photooxidation, with or without the combined effect of mild heating, and always using moderate conditions that could be closer to the conditions that are given in transport or distribution, avoiding high temperatures as in other accelerated studies. The study was carried out with different lipid matrices: triolein (used as model without any minor compound), sunflower oil, refined olive oil and virgin olive oil. The data has been reorganized for a better understanding. Thus, the sheets include the data for three different incubation conditions: 400 lx and 35°C, 400 lx and 23°C, 400 lx and 23°C. On the other hand, each sheet includes the fatty acid composition of the lipid matrices (before being subjected to degradation) and different FTIR parameters during incubation. These parameters include the minimum value of peak height (min. peak height), maximum value of peak height (max. peak height), the difference between maximum and minimum values of peak height (∆ height), and the slope of the regression line of absorption over time [Slope (x10-3)]. Furthermore, these parameters have been measured in different spectrum location to consider primary and secondary oxidation products and other degradation compounds: Alcohols (~3535 cm-1), hydroperoxides (~3430 cm-1), and C=C stretching absorption of unsaturated carbonyl compound (~1640 cm-1) associated to free fatty acids (hydrolysis). Furthermore, the data for conjugated trans isomers (~987 cm-1) and isolated trans isomers (~967 cm-1) are also shown.
