Buddhist temple kimchi, on the vegan diet (animal-product free) basis, they exclude animal-product (meat and seafood) and additionally limits Allium sativum f. pekinense Makino (garlic), Allium fistulosum L. (scallion), Allium tuberosum Rottl. ex Spreng. (leek), Allium monanthum Maxim. (rocambole), and Ferula assa-foetida L. (asafoetida). The goal of this study was to characterize how bacterial community changes in Buddhist temple kimchi.
