The goal of this study was to characterize the virulence potential of psychrotolerant Bacillus cereus strains from panC groups II and VI under conditions relevant to food safety. Specifically, we aimed to (i) determine whether these strains exhibit cytotoxicity and transcribe virulence genes at human body temperature (37 °C) relative to conditions representing psychrotolerant optimal growth (32 °C) and refrigeration temperature abuse (10 °C); (ii) evaluate how growth in nutrient-rich laboratory broth versus a dairy-based food matrix influence virulence gene transcription and cytotoxicity; and (iii) assess the biological stability of secreted virulence factors following exposure to stressors that mimic thermal treatment and gastrointestinal passage.The file "Figure_1.csv" contains the Newick tree file for all isolates. The file "Figure_2.csv" contains the cytotoxicity data for all isolates at 32 °C and 37 °C. The file "Figure_3.csv" contains the cytotoxicity data for a subset of isolates at 10 °C and 32 °C. The file "Figure_4_raw_data.csv" contains the raw RT-qPCR data, and the file "Figure_4.csv" contains the Log2FC RT-qPCR data for a subset of isolates at 10 °C and 32 °C. The file "Figure_5.csv" contains the cytotoxicity data for a subset of isolates after exposure to protein-destabilizing conditions. The file "Figure_S1.csv" contains the growth data for all isolates at 6 °C. The file "BTyper3_output.csv" contains the BTyper3 report for all isolates.
