Dataset for: Microstructure and rheology of particle stabilized emulsions: Effects of particle shape and inter-​particle interactions

This dataset consists of viscosity versus shear rate and storage and loss modulii for silica particle stabilized emulsions. The viscosity is normalized by the viscosity of the continuous phase, water. The data was obtained on a ARES G2 rheometer. Samples were temperature equilibrated and a calibrated cone and plate unit was used to obtain the viscosity of the samples as a function of shear rate. The storage and loss module were obtained as function of strain rate viscoelastic regions for the samples. The data also consists of droplet size distributions.
