Oral biodisponibility of methylmercury, selenium and arsenic from tuna flesh assessed using pig model. We assessed the cooking effect on oral bioavailibility and bioaccessibility. As mentioned in literature, cooking decreased the bioaccessibility of MeHg, while it did not affect the MeHg oral bioavailibility. In vivo, cooking affect arsenic assimilation, while it did not impact the selenium uptake. Methylmercury was greatly distributed in the red blood cell fraction, while arsenic and selenium were mostly found in the serum fraction. his is the first study to indicate that bioaccessibility cannot be readily used as a surrogate for in vivo studies.
