This dataset contains results of phenolic compound determination and antioxidant activity assessment in extracts of cornflower (Centaurea cyanus L.) (three extraction solvents: water (H2O), 1% HCOOH, 80% MeOH) flowers using analytical approaches: · Spectrophotometry – total phenolic content (TPC, Folin-Ciocalteu method, gallic acid standard, GAE) and total flavonoid content (TFC, AlCl₃ method, quercetin standard, QE); Antioxidant activity – ABTS method (ABTS•⁺ radical, Trolox standard) and DPPH method (DPPH• radical, Trolox standard); results expressed as mmol Trolox/g DW; · HPLC-DAD – quantitative determination of 16 individual phenolic compounds; · LC-MS-QTOF – qualitative analysis (compound identification based on exact mass, spectral library matching and references);
