PacBio sequencing of Saccharomyces bayanus var. uvarum. The probiotic yeast has been patented patented by BIOENOLOGIA 2.0 company, is a sulfide-free, malic acid and glycerol producer, part of a selection of yeasts from grapes and flowers of Giaggiolo (Iris pallida). The experimental project is in collaboration with the Department of soil, plant and food sciences DISSPA, University of Bari "Aldo Moro".
