Clostridium was recognized as one of the core genera in pit mud of Chinese Luzhou-flavor baijiu through the pyrosequencing analysis, due to their ability of producing metabolites influencing baijiu flavor (e.g. organic acids and short chain fatty acids) and their roles in interfering the whole microbial community structure during brewing via the multiple interactions with other microbes. In the programme of an investigation into the diversity and function of Clostridia in baijiu production, we isolated a novel Clostridium strain from the pit mud continuously used over 100 years from Luzhou Laojiao Group Co., Ltd, located in Luzhou city, Sichuan Province.
