The importance of microbial diversity in the processing of wine and other fermented products, in general, cannot be overemphasized. Improved knowledge of microbiome diversity and its interactions or shifts within fermentation processes, could lead to a better understanding of this activity. In our study, we used a metabarcoding approach to investigate the diversity of bacteria and fungi and how this changes from the beginning to the end of alcoholic fermentation (AF) across two different environments.
