基于规范的食品抽(取)样和实验室检测,依据标准方法处理原始检测数据,获得所检食品样本中挥发性盐基氮含量数据,通过比对食品安全国家标准,对样品进行合格性评价,判定食品中挥发性盐基氮含量是否达标。该数据可为食品生产主体掌握食品质量状况、进一步加大原材料质量管理、严格落实产品保鲜防腐及包装储运等工艺规范要求,提升食品安全水平提供科学依据,并为监管部门开展食品安全监管提供执法证据。1.样品检测:依据相关工作规范组织抽(取)样及待测样制备,精确称取均质待测样20.000g,按照《食品安全国家标准 食品中挥发性盐基氮的测定》(GB 5009.228-2016 第一法 半微量定氮法)所示标准方法进行前处理及滴定检测,读取标准滴定溶液消耗体积V1(mL)数据。2.数据处理:根据计算式计算样品中挥发性盐基氮含量检测结果(mg/100g)=(V×C×V1×14×100)/(m×V2),其中,C(molg/L)为标准滴定溶液浓度,V(mL)为样液总体积,V1(mL)为标准滴定溶液消耗体积,V2(mL)为吸取滤液体积,m(g)为取样量。3.合格率计算:根据样品所属食品细类,参照相关食品安全国家标准,如《《食品安全国家标准 动物性水产制品》》(GB 10136-2015)等,对样品中挥发性盐基氮含量进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:食品生产经营单位可根据食品中挥发性盐基氮含量检测数据,对照食品安全国家标准,掌握食品安全质量状况,进一步加大原材料质量管理、严格落实产品保鲜防腐及包装储运等工艺规范要求,确保食品安全

Based on standardized food sampling and laboratory testing, raw test data are processed in accordance with standard methods to obtain the total volatile basic nitrogen (TVB-N) content data of the tested food samples. By comparing with national food safety standards, the eligibility of the samples is evaluated to determine whether the TVB-N content in the food meets the specified standards. This dataset can provide scientific basis for food producers to grasp food quality status, further strengthen raw material quality management, strictly implement process specifications such as product fresh-keeping, anti-corrosion, packaging, storage and transportation, improve food safety levels, and provide law enforcement evidence for regulatory authorities to carry out food safety supervision. 1. Sample Testing: Sampling and preparation of test samples are conducted in accordance with relevant working specifications. Precisely weigh 20.000 g of the homogenized test sample, perform pretreatment and titration detection according to the standard method specified in "National Food Safety Standard - Determination of Total Volatile Basic Nitrogen in Foods" ("GB 5009.228-2016", First Method: Semi-micro Nitrogen Determination Method), and record the consumption volume V1 (mL) of the standard titration solution. 2. Data Processing: Calculate the TVB-N content (mg/100g) of the sample using the following formula: TVB-N content (mg/100g) = (V × C × V1 × 14 × 100) / (m × V2) Where C (mol/L) is the concentration of the standard titration solution, V (mL) is the total volume of the sample solution, V1 (mL) is the consumption volume of the standard titration solution, V2 (mL) is the volume of the aspirated filtrate, and m (g) is the weight of the sampled test sample. 3. Qualification Rate Calculation: According to the specific food category of the sample, refer to relevant national food safety standards such as "National Food Safety Standard - Aquatic Animal Products" ("GB 10136-2015"), evaluate the eligibility of the TVB-N content in the sample, and calculate the qualification rate (%) as: Qualification Rate (%) = (Number of Qualified Samples / Number of Tested Samples) × 100% 4. Data Application: Food production and business units can refer to national food safety standards based on the TVB-N content test data of foods to grasp food safety and quality status, further strengthen raw material quality management, strictly implement process specifications such as product fresh-keeping, anti-corrosion, packaging, storage and transportation, and ensure food safety.
