The composition of the microbial and viral communities of two different vegetables (cabbage and carrot) was monitored during the fermentation process (28 days) using shotgun and viral metagenomics approaches. The viral metagenomics workflow included DNA amplification to capture both dsDNA and ssDNA viruses. This dataset provides insights into the temporal variations of the complex microbial and viral communities of fermented vegetables.
