Eight novel miso varieties were developed using protein-rich substrates such as yellow peas, lentils, and fava beans (each with two treatments: boiling and nixtamalisation), as well as rye bread and soybeans, produced in Denmark. We also incorporated in this study six samples of novel misos produced in Japan, following the same recipe.
