Goose foie gras holds significant economic value due to its high nutritional content and unique flavor. Its production requires excessive force-feeding with high-energy feed, which disrupts hepatic lipid metabolism homeostasis and leads to excessive lipid accumulation. To investigate its formation mechanism, we collected liver samples from Landes geese at the pre-force-feeding stage (7 days, Early), mid-force-feeding stage (16 days, Mid), and final force-feeding stage (25 days, Final). In this study, we conducted RNA sequencing analysis to screen key pathways and genes associated with the formation of goose fatty liver.
