Origin and Hydrochemical Signature of High-Quality Water for Chinese Baijiu Brewing

To analyze the geochemical characteristics and element sources of baijiu brewing water, surface water and groundwater samples were collected. Water samples are distributed in producing areas of famous baijiu—— the Chishui River Basin and Jianghuai region. This dataset contains the basic water chemical compositions of the water samples from these areas. In the Chishui River Basin, data on hydrogen and oxygen isotopes of the collected water samples were also included.
