Transcriptome sequencing analysis of Salmonella enterica Enteritidis PT 30 in triglyceride

Peanut oil has a protective effect against Salmonella. However, peanut oil is a complex system. It is not clear whether different components of peanut oil have different effects on Salmonella.These DEGs were significantly enriched in the Flagellar assembly (up-regulated), Bacterial chemotaxis (up-regulated), and Ribosome (down-regulated) pathway. This study tracked the stability of Salmonella in different triglycerides. It revealed the molecular mechanism of the oil protection theory, which provided a theoretical basis for the mechanism of oil-enhanced Salmonella resistance.
