The data obtained in the work evaluate the accuracy and precision (repeatability) of the FCM method in combination with two fluorescent dyes for monitoring populations of viable yeast cells during inoculated and spontaneous AF of white Chardonnay must and red Zametovka mash under laboratory conditions. There are also data on the accuracy and precision of the FCM method compared to the reference method of plate counting on single cultures of <i>Saccharomyces</i><i> </i>and non-<i>Saccharomyces</i> yeast strains in sterile liquid YM growth medium.
