Terasi, a well-known Indonesian seafood made from reborn shrimp, undergoes fermentation involving a consortium of microorganisms, such as Lactic Acid Bacteria (LAB) and yeast, which contribute to its umami flavor. This study elucidates the microbial dynamics using metagenomic analysis with High-throughput sequencing of bacterial 16S rRNA gene.
