The microbiome of root vegetables - potato,carrot, beet and topinambur grated, subjected to in vitro gastrointestinal simulation conditions (low pH, gastric acids) followed by incubation in gliadin containing media at 37o C in anoxic condition. Bacteria which withstood and multiplied in these conditions were identified by NGS.
