Time-Resolved Image Feature Dataset of Coated Strawberries during Osmotic Dehydration and Microwave-Assisted Drying

This dataset contains handcrafted image features extracted from strawberries subjected to coating pre-treatments and osmotic dehydration, followed by microwave-assisted drying. Four different pre-treatment conditions were evaluated. Image acquisition was performed throughout the drying process, and image-based features were extracted at 10-minute intervals. The dataset includes morphometric and colorimetric descriptors computed from segmented strawberry samples, providing time-resolved quantitative information on sample evolution during drying. The dataset is intended for use in machine learning, clustering, and process monitoring applications related to food drying, computer vision, and agri-food engineering. It may also serve as a benchmark for feature-based analysis and time-series modeling of drying processes.
