Snow Cabbage samples were collected from Laogang Town in Shanghai to investigate the dynamic changes in the microbial community during fermentation, with the aim of identifying dominant functional microorganisms. These findings contribute to the optimization of the fermentation process, enhancing its standardization, safety, and controllability in industrial production. This study provides important insights for promoting high-quality development of the deep-processing industry of fermented Snow Cabbage.
