基于规范的食品抽(取)样和实验室检测,依据标准方法处理原始检测数据,获得所检食品样本中黄曲霉毒素B1含量数据,通过比对食品安全国家标准,对样品进行合格性评价,判定食品中黄曲霉毒素B1含量是否达标。该数据可为食品生产单位掌握食品安全质量状况、加大原材料质量管理、落实产品包装储运规范等提供科学依据,并为监管部门开展食品安全监管提供执法证据。1.样品检测:依据相关工作规范组织抽(取)样及待测样制备,精确称取均质待测样5.00g,按照《食品安全国家标准 食品中黄曲霉毒素B族和G族的测定》(GB 5009.22-2017)所示标准方法进行前处理及上机检测,读取样品浓度C(μg/L)数据。2.数据处理:根据计算式计算样品中黄曲霉毒素B1含量检测结果X(μg/kg)=(C×V×20×n×1000)/(4×m×1000),其中,C(μg/L)为样品浓度,V(mL)为定容体积,n为稀释倍数,m(g)为取样量。3.合格率计算:依据《食品安全国家标准 食品中真菌毒素限量》(GB 2761-2017)对样品黄曲霉毒素B1污染情况进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:食品生产经营单位可根据食品中黄曲霉毒素B1含量检测数据,对照食品安全国家标准,掌握食品安全质量状况,进一步加大原材料质量管理、严格落实产品包装储运规范要求;食品安全监管部门根据检测数据及合格率统计数据精准开展食品安全监管和风险交流。

Based on standardized food sampling and laboratory testing, raw test data were processed via standard methods to acquire the aflatoxin B1 content data of the tested food samples. Conformity assessment was performed on the samples by comparing against national food safety standards to determine whether the aflatoxin B1 content in the food complied with the requirements. This dataset can provide scientific evidence for food production enterprises to grasp food safety and quality conditions, strengthen raw material quality management, and implement product packaging, storage and transportation specifications, as well as provide law enforcement evidence for regulatory authorities to conduct food safety supervision. 1. Sample Testing: Sampling and test sample preparation were carried out in accordance with relevant operational specifications. A 5.00 g portion of homogeneous test sample was accurately weighed, followed by pretreatment and instrumental analysis according to the standard method specified in National Food Safety Standard - Determination of Aflatoxins B and G in Foods (GB 5009.22-2017). The sample concentration C (μg/L) was recorded. 2. Data Processing: The test result X (μg/kg) of aflatoxin B1 content in the sample was calculated using the formula: X = (C × V × 20 × n × 1000) / (4 × m × 1000) Where C (μg/L) is the sample concentration, V (mL) is the constant volume, n is the dilution multiple, and m (g) is the sample mass. 3. Qualification Rate Calculation: Conformity assessment for aflatoxin B1 contamination of the samples was conducted in accordance with National Food Safety Standard - Limits of Mycotoxins in Foods (GB 2761-2017). The qualification rate (%) was calculated as: Qualification Rate (%) = (Number of Qualified Samples / Total Number of Tested Samples) × 100% 4. Data Application: Food production and operation enterprises can use the aflatoxin B1 content test data of foods and compare them with national food safety standards to grasp the food safety and quality status, further strengthen raw material quality management, and strictly comply with the specifications for product packaging, storage and transportation. Food safety regulatory authorities can carry out precise food safety supervision and risk communication based on the test data and qualification rate statistics.
