In this study, the species composition of 17 sourdoughs of different origins was investigated. Hereto, a metagenetics approach was used, targeting the V4 region of the 16S rRNA gene for bacteria and the ITS1 region for yeasts, as well as a shotgun metagenomics approoach. the latter approach was performed on 4 out of the 17 samples.
