Gamma aminobutyric acid production by commercially available probiotic strains

Some bacteria can produce GABA from glutamate in the human intestine, leading to the possibility of altering GABA levels through diet. Levilactobacillus brevis LB01 and Lactiplantibacillus plantarum 299v were found to be the most efficient probiotic strains for GABA production in pure cultures screening. The aim of this work was to demonstrate that production can also occur in a simulated intestinal environment using pH-controlled anaerobic batch cultures inoculated with faecal samples.
