Dried fish is a popular and affordable source of protein in Bangladesh, enjoyed by millions of people across the country. However, the drying, handling, and storage conditions in local markets can influence the types of microorganisms that grow on these products, some of which may affect quality, taste, and even safety. This study aims to uncover the microbial communities present in dried fish sold at local markets across Bangladesh using 16S RNA metagenome sequencing and bioinformatics tools. By identifying both beneficial and harmful microbes, the research will provide insights into food safety, preservation practices, and microbial diversity associated with traditional fish-drying methods.
