本数据主要用于监测三门青蟹(膏)铁指标的变化情况,用于监管部门加强对三门青蟹养殖经营过程的监管。1.样品来源:本项目抽检的青蟹全部来源于三门县流通环节市场主体经营的青蟹,检测部位是膏。 2.数据检测:青蟹样品经处理并取出蟹膏,经消解后,由电感耦合等离子体质谱仪测定,以铁元素特定质量数定性,采用外标法,以铁元素质谱信号与内标元素质谱信号的强度比与铁元素的浓度成正比进行定量分析。 3.数据判定:铁含量的计算,x=(ρ-ρ0)×v×f/m。试样铁含量,单位为毫克每千克或毫克每升(mg/kg或 mg/L);ρ试样溶液中被测元素质量浓度,单位为毫克每升(mg/L);ρ0试样空白液中被测元素质量浓度,单位为毫克每升(mg/L);V试样消化液定容体积,单位为毫升(ml);f试样稀释倍数;m试样称取质量或移取体积,单位为克或毫升(g或 ml)。计算结果保留三位有效数字。根据中国食品安全法规定,食品中铁含量每1000克大于或等于30毫克的可以标识为高铁食品。 4.数据应用:通过抽检数据分析研判,对通过抽检结果加强该区域水质、土壤的检测以及养殖过程的监管,提升三门青蟹质量水平。

This dataset is primarily used to monitor the changes in iron content indicators of Sanmen crabs (crab roe), to enable regulatory authorities to strengthen the supervision over the breeding and business operations of Sanmen crabs. 1. Sample Source: All crabs sampled in this project were sourced from those sold by market entities in the circulation sector of Sanmen County, with the tested part being the crab roe. 2. Data Detection: After processing the crab samples and extracting the crab roe, the samples are digested and then determined via Inductively Coupled Plasma Mass Spectrometry (ICP-MS). Qualitative analysis is conducted based on the specific mass number of iron, while the external standard method is adopted for quantitative analysis: the intensity ratio between the mass spectrometric signal of iron and that of the internal standard element is proportional to the concentration of iron. 3. Data Judgment: The iron content is calculated using the formula: $x = ( ho - ho_0) imes V imes f / m$. The iron content of the test sample is expressed in milligrams per kilogram or milligrams per liter (mg/kg or mg/L), with the following definitions: - $ ho$: Mass concentration of the detected element in the test sample solution, unit: mg/L; - $ ho_0$: Mass concentration of the detected element in the test blank solution, unit: mg/L; - $V$: Constant volume of the digested test sample solution, unit: milliliter (ml); - $f$: Dilution factor of the test sample; - $m$: Mass of the weighed test sample or volume of the pipetted test sample, unit: gram or milliliter (g or ml). All calculation results shall be retained to three significant figures. According to the provisions of the Food Safety Law of the People's Republic of China, foods with iron content of 30 mg or more per 1000 grams can be labeled as high-iron foods. 4. Data Application: Through analysis and evaluation of the sampling inspection data, the detection of water quality and soil in this region and the supervision over the breeding process can be strengthened based on the sampling results, so as to improve the quality level of Sanmen crabs.
