In this study, the microbial diversity of five traditional fermented milks during in vitro transmission was resolved using ultra-high depth macro-genome sequencing. Microorganisms in traditional fermented milk tend to live together, although there are large differences in species composition and abundance in these traditional fermented dairy products. The microecology of some conventional fermented milks is very stable with in vitro passages, but some conventional fermented milks show drastic fluctuations with passages.
