Sequencing of industrial Saccharomyces cerevisiae strains

This project focuses on the genomic sequencing and analysis of industrial Saccharomyces cerevisiae strains used in fermentation processes. By obtaining high-quality genome sequences, we aim to uncover the genetic diversity, adaptive mechanisms, and functional characteristics that contribute to their performance in industrial environments such as ethanol production, baking, and brewing. Comparative genomic analysis among strains will help identify key genes related to stress tolerance, metabolic efficiency, and flavor compound synthesis. The results will provide valuable insights for strain improvement, process optimization, and the development of more efficient industrial yeast strains.
