To use high throughput sequencing technology to study the diversity and characteristics of bacterial communities in characteristic fermented mulberry wine with different natural fermentation cycles, so as to improve the food safety and quality of fermented fruit wine products. Collect the six month short term fermentation new wine and eighteen month long term fermentation aged wine mulberry wine samples from the fruit mulberry picking garden in Town, Guangzhou. After DNA extraction, the bacterial DNA region was amplified by chain reaction and sequencing, based on statistical sequencing data for species annotation, richness clustering and diversity analysis.
