The objectives of the project are to provide information on the evolution of fungal communities associated to ready-to eat pineapple and shed light on how these communities are changing during shelf life with the influence of the temperature used. Both objectives are of primary importance for the maintenance of quality and the extension of shelf-life. For the first time, a metagenetic amplicon sequencing approach, based on the ITS2 region is used for the study of pineapple microbiota.
