大肠菌群被广泛用作食品卫生质量检验的指示菌,可推测食品中存在肠道致病菌污染的可能性,判断是否存在食物中毒或传播流传病的危险。学校食堂餐饮具卫生关系到师生的身体健康,是食品安全法的基本要求,也是餐饮业管理的重要内容。通过对某县城区内24所中小学食堂餐具清洗消毒后待使用的71批次消毒餐具进行采样; 依据《食品安全国家标准 消毒餐(饮)具》GB 14934-2016,采用纸片法对各类学校样品进行大肠菌群采样,带回实验室进行检测,筛选出大肠菌群残留量检测结果,通过GB 14934-2016标准进行判定,用于评估其餐具使用卫生性,大肠菌群发现率=大肠菌群检测出问题项次数/进行大肠菌群检测的餐具总数;餐具大肠菌群含量安全评价检测问题项检测结果可以作为学校食堂安全性评价依据,为监管部门靶向监管提供技术支撑。

Coliform bacteria are widely used as indicator bacteria for food hygiene quality inspection, which can be used to infer the possibility of enteric pathogenic bacteria contamination in food and assess the risk of food poisoning or infectious disease transmission. The hygiene of tableware and eating utensils in school canteens is closely related to the health of teachers and students, and it is not only a basic requirement stipulated in the Food Safety Law, but also an important part of catering industry management. A total of 71 batches of sterilized tableware and eating utensils that had been cleaned, disinfected and ready for use were sampled from the canteens of 24 primary and secondary schools in the urban area of a certain county. According to the National Food Safety Standard for Sterilized Tableware and Eating Utensils (GB 14934-2016), the paper strip method was adopted to collect samples for coliform bacteria detection from all school samples, which were then transported back to the laboratory for testing. The detection results of coliform bacteria residue were screened, and the hygiene status of the tableware was evaluated by judging against the GB 14934-2016 standard. The detection rate of coliform bacteria is calculated as: number of problematic items with detected coliform bacteria / total number of tableware samples tested for coliform bacteria. The test results of problematic items from the safety evaluation of coliform bacteria content in tableware can serve as a basis for evaluating the safety of school canteens, providing technical support for targeted supervision by regulatory authorities.
