蔬菜制品中含有亚硝酸盐,食用过多很容易吃出问题。放置或腌制时,硝酸盐还原菌沙门氏菌、大肠杆菌等会将蔬菜中的的硝酸盐还原成对人体有毒的亚硝酸盐。对于成年人来说,亚硝酸盐的摄入量一次性达到0.3克-0.5克,会产生中毒症状,达到3克以上可以导致死亡。蔬菜制品中的亚硝酸盐含量的检测,为政府部门监管提供依据,避免因二氧化硫残留量超标使用而产生食品安全问题,进一步保障消费者的食品安全。1.数据采集:采集样品编号、检验数量、样品名称、项目、方法、最大限定值、报告值、单位等信息;2.数据处理:(1)是否超出标准值,报告值为未检出、报告值小于等于最大限定值的为未超出,反之为超出,具体使用IF、OR的函数;(2)蔬菜制品中的亚硝酸盐含量检测总数:为数据统计范围内总检验数量;(3)蔬菜制品中的亚硝酸盐含量检出问题项次数:通过SUMIF函数将超出标准值的检验数量求和;(4)蔬菜制品中的亚硝酸盐含量发现率=蔬菜制品中的亚硝酸盐含量检出问题项次数/蔬菜制品中的亚硝酸盐含量监测总数*100%。

Nitrites are present in vegetable products, and excessive consumption thereof readily causes adverse health effects. During storage or pickling, nitrate-reducing bacteria such as Salmonella and Escherichia coli can reduce the nitrates naturally present in vegetables into nitrites, which are toxic to the human body. For adults, a single intake of 0.3–0.5 grams of nitrites will induce toxic symptoms, while an intake exceeding 3 grams can lead to death. Detection of nitrite content in vegetable products provides a scientific basis for government regulatory supervision, helps prevent food safety incidents caused by excessive residual sulfur dioxide, and further safeguards consumer food safety. 1. Data Collection: Collect information including sample number, inspection quantity, sample name, test item, detection method, maximum allowable limit, reported value, and unit of measurement. 2. Data Processing: (1) Standard compliance determination: Samples with a reported value of "not detected" or a reported value less than or equal to the maximum allowable limit are classified as "within standard", while the rest are classified as "exceeding standard". This calculation is specifically implemented using the IF and OR functions. (2) Total number of nitrite content tests for vegetable products: Refers to the total number of inspections within the scope of the data statistics. (3) Number of non-compliant items detected for nitrite content in vegetable products: Sum the quantity of inspections that exceed the standard limit using the SUMIF function. (4) Non-compliant detection rate of nitrite content in vegetable products = (Number of detected non-compliant items / Total number of nitrite content tests for vegetable products) × 100%.
