This dataset contains Fourier Transform Infrared (FTIR) spectra of collagen isolated from Baltic salmon using different extraction methods. The spectra are compared with commercial fish collagens and fish gelatin to evaluate differences in functional groups and characteristic amide bands (Amide I, II, and III), providing insight into structural features and the influence of extraction methods and collagen sources.
