In this study the impact of altering a single daily side dish to be either refined grain based or potato based on the gut microbiota was examined. The hypothesis was that the increased resistant starch content of the potato based dishes even at these levels which are much less than are typically used in clinical trials would have a detectable impact on gut microbiota composition. This would suggest that even subtle dietary changes can influence the health benefits produced by gut microbes.
